Job Description:
Under the leadership of the department director, The Westland House Dietary Manager is responsible for the safe and efficient operation of the food service department in compliance with facility policies, federal and state regulations. The Westland House Dietary Manager recruits, interviews, hires, trains, coaches, evaluates, rewards, disciplines and terminates staff as needed. The Westland House Dietary Manager verifies that all positions are scheduled, covers staff shortages, and ensures staff has completed all assigned duties. The Westland House Dietary Manager is responsible for accurate inventory, purchasing, safe receiving and storage of food and supplies per HACCP guidelines, and monitoring budgets. The Westland House Dietary Manager coordinates equipment repairs with Engineering or vendors. The Westland House Dietary Manager oversees food preparation to ensure production follows schedules, menus, and standardized recipes, quality, holding, temperature and appearance. The Westland House Dietary Manager maintains cleaning schedules, logs, sanitation compliance, and equipment safety. The Westland House Dietary Manager assures diet orders, tray cards including food preferences and allergies, and patient trays are accurate in CBORD, and modify special diet menus as needed. The Westland House Dietary Manager provides medical nutrition therapy to meet patients' nutrition and educational needs. The Westland House Dietary Manager completes the Baseline Care Plan, initial nutrition screens, obtains food preferences, and assigns patients' nutrition risk level. The Westland House Dietary Manager assesses and documents patients' nutritional status (high risk patients), develops and implements individualized nutrition care plans in accordance with facility policies, regulatory standards, and evidence-based practices. The Westland House Dietary Manager completes MDS, CAA sections and care plans as scheduled. The Westland House Dietary Manager attends interdisciplinary team rounds/care conferences as needed.
Knowledge, Skills & Abilities
The Westland House Manager must possess strong leadership, coaching and supervisory skills. The Westland House Manager must possess excellent organizational, prioritizing, and problem-solving skills. The Westland House Manager must have outstanding customer service, written and verbal communication skills, and the ability to collaborate with staff, physicians, consultants and vendors. The Westland House Manager must have the knowledge of state and federal regulations and standards of care.
Education
Bachelor's degree (minimum) in Dietetics, Nutrition or related field required
Experience
Food service experience is required. Two years' experience in food service management preferred. Intermediate computer skills required.
Two years' experience in clinical dietetics in a hospital or skilled nursing facility required.
Licensure/Certifications
Registered Dietitian/Registered Dietitian Nutritionist through Commission on Dietetic Registration
ServSafe Manager Certification at the time of hire or within 180 days of hire
American Heart Association Healthcare Provider BLS required.
